啤酒工業廢水處理與利用技術研究進展

摘(zhai)要(yao):啤(pi)酒廢(fei)水(shui)中有機(ji)物的(de)含量較(jiao)高(gao),如(ru)直接排(pai)放(fang),既(ji)污染 環(huan)境,又降低啤(pi)酒 工業(ye) 的(de)原料利(li)(li)用(yong)率.為此,許多學者和廠家對(dui)啤(pi)酒廢(fei)水(shui)的(de)處理與利(li)(li)用(yong)技(ji)術(shu) 進行了(le) 研究 .本文在闡(chan)述啤(pi)酒廢(fei)水(shui)的(de)來源及特(te)點的(de)基礎上,對(dui)幾種常見(jian)的(de)處理利(li)(li)用(yong)技(ji)術(shu)進行 了(le)比較(jiao),結論是:單一(yi)的(de)處理和利(li)(li)用(yong)技(ji)術(shu)不能從(cong)根本上解(jie)決啤(pi)酒廢(fei)水(shui)的(de)污染 問(wen)題 ,只有將多 種技(ji)術(shu)結合使用(yong),才(cai)能達到 經濟 效益和環(huan)境效益的(de)統一(yi).

Advances on the Treatment and Utilization of Brewery Wastewater

ABSTRACT BEing a liquid containing high organic pollutants, brewery wastewater may not only lead to environmental pollution,but also decreas e the utilization ratio of raw material used in beer production. The refore,many sc holars and breweries have paid much attention to developing new techniques for t reating and making use of brewery wastewater.This paper makes a comparison among various new techniques on the basis of analyzing the sources and characteristic s of brewery wastewater.It is concluded that a single technique can not effectiv ely remove the contamination from brewery wastewater,and only the combination of various techniques can achieve great benefits both in economy and in environment.Thus, several proposals are put forward for future research. 隨著人民生(sheng)(sheng)(sheng)活水(shui)(shui)(shui)平的(de)(de)(de)(de)提高,我國(guo)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)工業(ye)得(de)到(dao)了(le)長(chang)足 發展 ,其(qi)產(chan)(chan)(chan)(chan)量(liang)逐年(nian)(nian)上(shang)升.1988年(nian)(nian)全(quan)國(guo)有(you)(you) 啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)廠800多(duo)家,年(nian)(nian)產(chan)(chan)(chan)(chan)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)663萬t[1],位居(ju)世(shi)界第(di)三;經過近十年(nian)(nian)的(de)(de)(de)(de)發展, 目(mu)前 已(yi) 達到(dao)1000多(duo)家,年(nian)(nian)產(chan)(chan)(chan)(chan)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)1000多(duo)萬t,成為(wei)世(shi)界第(di)二大(da)(da)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)生(sheng)(sheng)(sheng)產(chan)(chan)(chan)(chan)國(guo)[2].但是(shi)在啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu) 產(chan)(chan)(chan)(chan)量(liang)大(da)(da)幅度提高的(de)(de)(de)(de)同時,也向(xiang)環境中排放了(le)大(da)(da)量(liang)的(de)(de)(de)(de)有(you)(you)機廢水(shui)(shui)(shui).據統計,每生(sheng)(sheng)(sheng)產(chan)(chan)(chan)(chan)1 t啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)需要10 ~30 t新(xin)鮮水(shui)(shui)(shui),相應(ying)地產(chan)(chan)(chan)(chan)生(sheng)(sheng)(sheng)10~20 t廢水(shui)(shui)(shui)[3].我國(guo)現(xian)在每年(nian)(nian)排放的(de)(de)(de)(de)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)廢水(shui)(shui)(shui)已(yi)達1. 5億(yi)t[4].由于(yu)這種廢水(shui)(shui)(shui)含有(you)(you)較高濃度的(de)(de)(de)(de)蛋白質、脂肪(fang)、纖(xian)維、碳水(shui)(shui)(shui)化合物、廢酵母 .酒(jiu)(jiu)(jiu)花殘渣等(deng)有(you)(you)機無毒成分(fen)(fen),排入天然水(shui)(shui)(shui)體后將消耗(hao)水(shui)(shui)(shui)中的(de)(de)(de)(de)溶解氧(yang),既造成水(shui)(shui)(shui)體缺氧(yang),還(huan) 能促使水(shui)(shui)(shui)底沉積化合物的(de)(de)(de)(de)厭(yan)氧(yang)分(fen)(fen)解,產(chan)(chan)(chan)(chan)生(sheng)(sheng)(sheng)臭氣(qi),惡化水(shui)(shui)(shui)質[5].另外(wai),上(shang)述(shu)成分(fen)(fen)多(duo)來 自啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)生(sheng)(sheng)(sheng)產(chan)(chan)(chan)(chan)原(yuan)料(liao)(liao),棄之(zhi)不用(yong)不僅造成資源的(de)(de)(de)(de)巨大(da)(da)浪費,也降低了(le)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)生(sheng)(sheng)(sheng)產(chan)(chan)(chan)(chan)的(de)(de)(de)(de)原(yuan)料(liao)(liao)利用(yong)率.因 此,在糧食缺乏,水(shui)(shui)(shui)和(he)資源供應(ying)緊張的(de)(de)(de)(de)今(jin)天,如何既有(you)(you)效地處理(li)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)廢水(shui)(shui)(shui)又充分(fen)(fen)利用(yong)其(qi)中的(de)(de)(de)(de) 有(you)(you)用(yong)資源,已(yi)成為(wei)環境保護的(de)(de)(de)(de)一(yi)項重要研究 內(nei)容 .本(ben)文根據前人的(de)(de)(de)(de)研究結果綜述(shu)了(le)啤(pi)(pi)(pi)(pi)酒(jiu)(jiu)(jiu)廢水(shui)(shui)(shui) 的(de)(de)(de)(de)處理(li)和(he)利用(yong)現(xian)狀(zhuang),以便為(wei)進一(yi)步探討效益(yi)資源型處理(li)技術提供借鑒(jian).

1 啤酒(jiu)廢水(shui)的(de)產生與(yu)特點   啤酒(jiu)生產工(gong)(gong)藝(yi)流程包(bao)括制(zhi)麥(mai)(mai)和(he)釀(niang)造(zao)兩部分.二者均有冷卻水(shui)產生,約占啤酒(jiu)廠總排(pai)水(shui)量(liang)(liang)的(de)65% ,水(shui)質較好(hao),可循環用于(yu)浸(jin)洗麥(mai)(mai)工(gong)(gong)序(xu)[7].中、高(gao)污染負(fu)荷的(de)廢水(shui)主要來自制(zhi)麥(mai)(mai) 中的(de)浸(jin)麥(mai)(mai)工(gong)(gong)序(xu)和(he)釀(niang)造(zao)中的(de)糖化、發酵、過濾、包(bao)裝工(gong)(gong)序(xu),其化學需氧量(liang)(liang)在500~40000 mg.L-1之間,除了包(bao)裝工(gong)(gong)序(xu)的(de)廢水(shui)連(lian)續排(pai)放以外,其它廢水(shui)均以間歇方式(shi)排(pai)放[8](見(jian)表1).

啤(pi)酒(jiu)廠總排水(shui)屬于中(zhong)、高濃度(du)的(de)有機(ji)廢(fei)水(shui),呈(cheng)酸性,pH值為(wei)(wei)4.5~6.5[7],其中(zhong) 的(de)主要(yao)污染(ran)因子是(shi)化(hua)學需(xu)氧量(liang)(liang)(CODcr)、生化(hua)需(xu)氧量(liang)(liang)(BOD5)和(he)(he)懸浮物(SS),濃 度(du)分別為(wei)(wei)1000~1500,500~1000和(he)(he)220~440 mg.L-1[3].啤(pi)酒(jiu)廢(fei)水(shui)的(de)可生化(hua)性(BOD5/CODcr)較(jiao)大,為(wei)(wei)0.4~0.6[7],因此很(hen)多治理(li)技(ji)術的(de)主體部分是(shi)生 化(hua)處理(li).

5084-85)的(de)(de)(de)(de)(de)(de)要(yao)求;同時(shi) 這(zhe)(zhe)些(xie)植物(wu)(wu)(wu)(wu)長(chang)(chang)勢良(liang)好(hao)并能完成(cheng)(cheng)(cheng)其(qi)生(sheng)(sheng)(sheng)(sheng)活史,既創造了經濟(ji)效益,同時(shi)又(you)顯(xian)著降低了廢(fei)(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)中(zhong)(zhong)多(duo)種(zhong)污 染物(wu)(wu)(wu)(wu)(COD除外)的(de)(de)(de)(de)(de)(de)濃度(du)(見表2).這(zhe)(zhe)為(wei)啤(pi)(pi)酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)(de)(de)資源化(hua)(hua)處(chu)理(li)(li)開拓了一(yi)(yi)條新思路.據報道(dao) ,目前,無錫市釀酒(jiu)(jiu)(jiu)(jiu)總廠已在(zai)氧(yang)化(hua)(hua)塘中(zhong)(zhong)種(zhong)植絲瓜(gua)以強化(hua)(hua)處(chu)理(li)(li)系(xi)統(tong)(tong)的(de)(de)(de)(de)(de)(de)凈化(hua)(hua)效果[27].

水(shui)(shui)(shui)培植(zhi)物(wu)對廢水(shui)(shui)(shui)中COD的(de)(de)去除(chu)率(lv)不高(gao),主(zhu)要(yao)是(shi)因為(wei)廢水(shui)(shui)(shui)中C的(de)(de)含(han)量大大高(gao)于N,P,而植(zhi)物(wu) 是(shi)按照一(yi)定的(de)(de)C,N,P比(bi)例(li)來攝取營養物(wu)質的(de)(de).從這一(yi)點來看,水(shui)(shui)(shui)培植(zhi)物(wu)用于生物(wu)處理后出 水(shui)(shui)(shui)(含(han)C量已大為(wei)降低)的(de)(de)深度(du)凈化(hua)更(geng)為(wei)合理.

4 結(jie)(jie) 語   (1)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)是(shi)一(yi)(yi)種(zhong)(zhong)(zhong)中(zhong)(zhong)、高(gao)(gao)(gao)濃(nong)(nong)度(du)的(de)(de)(de)(de)有機(ji)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui),隨著(zhu)啤酒(jiu)(jiu)(jiu)(jiu) 工業 的(de)(de)(de)(de)不斷 發(fa)展 ,其(qi)(qi)產(chan)生量(liang)(liang)也(ye)將(jiang) 持續上(shang)升.為了(le)(le)(le)避免納污水(shui)(shui)(shui)(shui)(shui)(shui)(shui)體的(de)(de)(de)(de)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)質(zhi)惡化(hua),除(chu)了(le)(le)(le)實行(xing)清(qing)(qing)、污分流,提高(gao)(gao)(gao)冷卻水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)循環(huan)利用(yong)率(lv)(lv) 以(yi)降(jiang)(jiang)低(di)(di)(di)排(pai)放量(liang)(liang)外,還必須(xu)對(dui)其(qi)(qi)進(jin)行(xing)有效(xiao)(xiao)處(chu)(chu)理(li)(li).   (2)好(hao)氧(yang)生物(wu)(wu)處(chu)(chu)理(li)(li)、厭(yan)氧(yang)生物(wu)(wu)處(chu)(chu)理(li)(li)、土(tu)(tu)地(di)利用(yong)和(he)植物(wu)(wu)凈化(hua)等方(fang)法(fa)是(shi)常見(jian)的(de)(de)(de)(de)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)治理(li)(li) 方(fang)法(fa).好(hao)氧(yang)生物(wu)(wu)處(chu)(chu)理(li)(li)對(dui)于(yu)低(di)(di)(di)濃(nong)(nong)度(du)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)有較高(gao)(gao)(gao)的(de)(de)(de)(de)COD去(qu)(qu)(qu)除(chu)率(lv)(lv)(>90%),但(dan)是(shi)需要大量(liang)(liang)的(de)(de)(de)(de)投資(zi) 和(he)場(chang)地(di),能(neng)(neng)耗較高(gao)(gao)(gao),受外界環(huan)境(溫度(du)等) 影(ying)響 較大;厭(yan)氧(yang)生物(wu)(wu)處(chu)(chu)理(li)(li)對(dui)于(yu)高(gao)(gao)(gao)濃(nong)(nong)度(du)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)有較高(gao)(gao)(gao) 的(de)(de)(de)(de)CODcr去(qu)(qu)(qu)除(chu)率(lv)(lv),它(ta)克(ke)服(fu)了(le)(le)(le)好(hao)氧(yang)生物(wu)(wu)處(chu)(chu)理(li)(li)的(de)(de)(de)(de)大多(duo)數(shu)缺(que)點,還能(neng)(neng)進(jin)行(xing)生物(wu)(wu)質(zhi)能(neng)(neng)轉化(hua),大幅(fu)度(du)降(jiang)(jiang) 低(di)(di)(di)處(chu)(chu)理(li)(li)成(cheng)本(ben),因(yin)而為越來越多(duo)的(de)(de)(de)(de)廠家所采(cai)用(yong),其(qi)(qi)最大缺(que)陷是(shi)出(chu)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)CODcr的(de)(de)(de)(de)濃(nong)(nong)度(du)仍然很高(gao)(gao)(gao),難 以(yi)達(da)到(dao)《污水(shui)(shui)(shui)(shui)(shui)(shui)(shui)綜合排(pai)放標準》的(de)(de)(de)(de)要求(qiu).土(tu)(tu)地(di)利用(yong)系統(tong)雖然能(neng)(neng)夠改善廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)質(zhi),節約水(shui)(shui)(shui)(shui)(shui)(shui)(shui)源, 增加土(tu)(tu)壤(rang)有機(ji)質(zhi)含量(liang)(liang),但(dan)是(shi)占地(di)面積大,易產(chan)生臭味,還可(ke)(ke)能(neng)(neng)引起土(tu)(tu)壤(rang)鹽(yan)堿(jian)化(hua).用(yong)植物(wu)(wu)凈化(hua) 啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui),可(ke)(ke)以(yi)有效(xiao)(xiao)去(qu)(qu)(qu)除(chu)其(qi)(qi)中(zhong)(zhong)的(de)(de)(de)(de)N,P和(he)濁度(du),并可(ke)(ke)獲得(de)一(yi)(yi)定的(de)(de)(de)(de)經(jing)(jing)濟(ji)效(xiao)(xiao)益,但(dan)是(shi)對(dui)CODcr的(de)(de)(de)(de)去(qu)(qu)(qu) 除(chu)率(lv)(lv)卻不高(gao)(gao)(gao).   (3)要得(de)到(dao)理(li)(li)想的(de)(de)(de)(de)處(chu)(chu)理(li)(li)結(jie)(jie)果,實現啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)治理(li)(li)的(de)(de)(de)(de)環(huan)境效(xiao)(xiao)益和(he)經(jing)(jing)濟(ji)效(xiao)(xiao)益的(de)(de)(de)(de)統(tong)一(yi)(yi),必須(xu)將(jiang) 兩(liang)種(zhong)(zhong)(zhong)或三(san)種(zhong)(zhong)(zhong)技術(shu)結(jie)(jie)合使(shi)用(yong),這是(shi)解決(jue)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)污染(ran)問題的(de)(de)(de)(de)根本(ben)出(chu)路.例如(ru),把(ba)(ba)厭(yan)氧(yang)和(he)好(hao)氧(yang)處(chu)(chu) 理(li)(li)池串(chuan)聯(lian)使(shi)用(yong),依靠(kao)前者把(ba)(ba)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)高(gao)(gao)(gao)負荷降(jiang)(jiang)低(di)(di)(di),再(zai)以(yi)后者把(ba)(ba)低(di)(di)(di)濃(nong)(nong)度(du)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)處(chu)(chu)理(li)(li)達(da)標,其(qi)(qi)動力(li)消 耗則可(ke)(ke)由前一(yi)(yi)過程(cheng)的(de)(de)(de)(de)質(zhi)能(neng)(neng)轉化(hua)予以(yi)補償(chang).又如(ru),把(ba)(ba)生物(wu)(wu)處(chu)(chu)理(li)(li)與土(tu)(tu)地(di)利用(yong)結(jie)(jie)合起來,既能(neng)(neng)有效(xiao)(xiao) 凈化(hua)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui),還能(neng)(neng)起到(dao)互(hu)補作用(yong),產(chan)生更高(gao)(gao)(gao)的(de)(de)(de)(de)經(jing)(jing)濟(ji)效(xiao)(xiao)益.   另外,在如(ru)下幾個方(fang)面還須(xu)作進(jin)一(yi)(yi)步研究:(1)啤酒(jiu)(jiu)(jiu)(jiu)工業實施清(qing)(qing)潔生產(chan)工藝的(de)(de)(de)(de)可(ke)(ke)行(xing)性(xing)及(ji)其(qi)(qi)綜 合效(xiao)(xiao)益 分析 ;(2)多(duo)種(zhong)(zhong)(zhong)處(chu)(chu)理(li)(li)技術(shu)串(chuan)聯(lian)使(shi)用(yong)時,其(qi)(qi)結(jie)(jie)合點上(shang)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)最適濃(nong)(nong)度(du);(3)厭(yan)氧(yang)和(he)好(hao)氧(yang)微生物(wu)(wu)種(zhong)(zhong)(zhong)類在一(yi)(yi)個處(chu)(chu)理(li)(li)單(dan)元內共(gong)同(tong)作用(yong)于(yu)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)可(ke)(ke)能(neng)(neng)性(xing)及(ji)相關的(de)(de)(de)(de)處(chu)(chu)理(li)(li)技術(shu);(4)啤酒(jiu)(jiu)(jiu)(jiu)廢(fei)(fei)(fei)水(shui)(shui)(shui)(shui)(shui)(shui)(shui)的(de)(de)(de)(de)土(tu)(tu)地(di)利用(yong)技術(shu)對(dui)土(tu)(tu)壤(rang)理(li)(li)化(hua)性(xing)質(zhi)的(de)(de)(de)(de)各種(zhong)(zhong)(zhong)可(ke)(ke)能(neng)(neng)影(ying)響.
